Description longue de la ressource.

Anglais Flers Agglo, in partnership with the Cin%E9Fert%E9 association and as part of the Alimenterre Festival “Our Future Lies on Our Plates” (alimenterre.org), an evening of discussion centered on the documentary film *%AB %C9bullition %BB* by Diego GARCIA-VEGA and Jaime DEZCALLAR (2025, Spain).
The discussion will be moderated by the Permanent Center for Environmental Initiatives (CPIE) Collines Normandes.
Synopsis:
Through seven innovative restoration projects—ranging from depopulated rural Spain to rapidly changing city centers and tourist coastlines—the film reveals the key ingredients of sustainable restoration. A form of restoration whose impact on society extends far beyond the dinner table.
At a time when more and more people are turning away from home cooking and eating out, these chefs are becoming aware of their responsibility—and their opportunity—to influence the course of events. Will the restaurant industry be able to lead this new historic shift?
The Selection Committee’s Opinion
The documentary *Ebullition* explores sustainable dining through various examples in Spain (Catalonia, the Basque Country, Andalusia). It highlights the connections between gastronomy, local products, and the promotion of regional areas, as well as the role of local and sustainable dining. It invites viewers to reflect on what “eating well” means through examples of a wide variety of initiatives (promoting local products, short supply chains, agroecological cuisine, resource sharing, and collective solutions, etc.). Through systemic reflections, he presents concrete and meaningful alternatives to improve our diet and our living conditions. This is a topic that is rarely addressed in the festival’s selections, which makes it all the more relevant. The testimonials are varied and connect cooking, the restaurant industry, and rural life through a positive message and beautiful imagery.
