This concept, created in the 1960s by the American epidemiologist Ancel Keys, was inscribed in 2010 by UNESCO on the Representative List of the Intangible Cultural Heritage of Humanity, thus promoting its recognition and globalization.\n \nThe Mediterranean diet is the fruit of a construction that has always been enriched by external contributions throughout history. At a time when it has become a globalized model, the question of the necessary reappropriation of its production and cuisine in the Mediterranean is now being raised.\nHow can we define and preserve geographical and cultural culinary authenticity, while sharing it with the greatest number of people? How to protect a diet without preventing it from evolving? How to remain permeable while remaining authentic?
