Ces parcelles ont pour spécificité d'être à échelle humaine (20 ares au maximum), ce qui permet de garantir une vigne exclusivement travaillée à la main, main qui reste toujours le meilleur outil tant dans sa précision que dans sa sensibilité.\n\nToutes les parcelles du domaine disposent d'une macro/micro flore et d'une macro/micro faune bien diversifiée et bien préservée.\nCelles de Soultzmatt sont historiques avec terrasses, murs en pierres sèches et même une petite cabane.
