La production globale s’élève à plus de 100 tonnes de champignons par an, cueillie entièrement à la main. La Cave des Roches dispose d’une gamme de champignons variés (pied bleu, shii také, pleurote, champignon de Paris d’autrefois... etc), elle produit 40% de la production mondiale de pieds bleus.
